Pumpkin Chocolate Chip Cookie Recipe

I received some requests for the pumpkin chocolate chip cookie recipe I pictured on Thanksgiving.  I was going to include the recipe but had to double check with my friend whether she minded me posting it, and lucky her, was in the Caribbean at the time so unavailable to ask.  The consistency of the cookies are so light, fluffy, and irresistible.  I have already made 2 batches.  Here it is:


 3 cups flour
1.5 cups oats
1.5 teaspoons baking soda
2 teaspoons cinnamon
3/4 teaspoon salt
1 cup butter. (2 sticks)
1 cup brown sugar
1 cup white sugar
2 eggs
2 teaspoons vanilla
1 small can pumpkin
1/2 package of mini chocolate chips

Preheat oven to 350 combine flour, oats, baking soda, cinnamon and salt.  Cream butter in another bowl.  Gradually add sugars to butter bowl beating until light and fluffy.  Add egg and vanilla.  Mix well.  Alternate additions of dry ingredients and pumpkin, mixing well after each addition.  Stir in morsels.  For each cookie drop 1/4 cup dough onto lightly greased cookie sheet.  Bake 15-20 mins.  

This recipe makes approximately 50 cookies.

  3. I have been craving for pumpkin spice latte (which is not available on my side of the world), I've been craving for pumpkin pies for ages now, and seeing this post you've officially got me craving for some pumpking chocolate chip cookie.
